Sweetness

These little boys make life sweeter every day. We had so much fun celebrating the death and resurrection of Christ with these little goofs!

The weekend before Easter we went to a park that hosted an egg hunt breakfast with the infamous Easter bunny

Saturday evening before Resurrection Sunday we did our own little egg hunt-the boys are terrible hunters but they sure have fun!

It was such a blessing to be all together at church on Sunday!

We have also enjoyed this devotional for kids- it walks thru all of the events of Christ's death and Resurrection and it has really helped us explain Easter better to our boys

We hope you enjoyed your Easter season too! There is no greater thing to celebrate than our Savior!

We are still here!

We have been under the weather with various plagues and pestilence :) but are slowly emerging! We are so grateful to our family and friends for the help we have received and learned a lesson or two about not complaining and being selfless for one another when no one feels well! But we look forward to this exciting weekend of celebration as we remember what our Lord did for us through His death and resurrection. Our Savior lives, what a comfort and joy it is to dwell on those simple truths!

Chickpea and Spinach Burgers

The Husband wasn't too excited about these when I told him what was for dinner, but he actually liked them! :) I loved them so I had to share. Who doesn't like dinner in 15 minutes? On the spices I just added what I thought sounded good at the moment and didn't measure so do what your family likes. I served them with organic baked sweet potato fries that I tossed in olive oil, sea salt and Herbes de Provence at 400F for 40 minutes or so. You could also serve with a salad or in between a bun.

Chickpea and Spinach Burgers

1 can chickpeas ( garbonzo beans) mashed
2 cups organic spinach, wilted or sauteed
1/3-1/2 cup panko bread crumbs, or your bread crumb of choice
1/4 cup quality all natural mayo ( if the mixture seems too dry add more mayo)
seasons to taste: salt, pepper, garlic powder, dill, basil and paprika

Smash all ingredients together and form into patties. Cook in a large skillet coated with olive oil over medium/high heat until browned on each side, about 5 min per side.

Makes 4 large or 6 small

Littlest Golfer

The boys babysitter told us about a free golf program for kids so we signed Weston up to see how he would like it! For a week he learned all about putting, chipping and his favorite...using the driver to hit the ball as far as possible. He was also the youngest and smallest ( and I think Cutest) little golfer there, so the instructors took special care with him. It was also fun to see him interact socially outside church. He definitely likes to be by the little girls :) I think we are in trouble! Nanni was able to make a trip down to watch our budding golfer and he was so proud of his new learned skill. I was really impressed at how well the program was run and how nice the people were, and all for free! Not used to that around here.

Gabe can't wait to join in next year, but he had fun climbing and running around the golf course, dropping goldfish crackers all over and rolling in the grass :)

LOVE

Happy Valentine's Day! Here are some sweet pics that my talented brother in law took for Andrew's mom to have of her kids. We are SO blessed by our family on all sides with a deep bond because of our mutual love for each other and more importantly the Lord. We have so much to celebrate and we thank all of our dear family for loving us so well! xoxo

Valentine's inspired meals

(Weston and his cousin Ava)

I love Valentine's Day so much and I have my mother and father to thank for that. My mom would always made a big deal about it starting when we were very young. She would make pink pancakes, buy us clothes covered in hearts and glitter, decorate the kitchen, fill our lunch sacks with confetti and dinner was in the same flair... My dad would buy my mom the biggest flower arrangement possible and half a dozen cards and chocolates, etc. So I grew up feeling that Valentine's Day was a holiday for families to celebrate their love for each other and I looked forward to it every year!
It wasn't until I was older that I realized that many people hate the holiday because it is all about having the right boyfriend/girlfriend or the most romantic date planned that day. And honestly, when I had a boyfriend on that holiday, they could hardly top what we had going at home and I love that!
So I want that for my kids too, to have a special day where they feel extra loved and special because they are our special blessings from the Lord!

Here are a couple festive recipes I have tried lately that would be fun to make around Valentine's Day for  your special people

Pan Seared Tilapia with an Orange Beet Fennel Salsa
This recipe is super quick and refreshing! The salsa can be made up to one day ahead. I served the fish over some sauteed rainbow chard and snap peas, which was a perfect match.

Salsa:
1 large orange, sections removed
4 small cooked red beets, diced
1 small bulb fennel shaved or thinly sliced
2 T. chopped green onion
2 T red wine vinegar, or your fav vinegar
dash salt and pepper

Stir all the ingredients together, can be made 1 day ahead

Tilapia:

Heat 1 T. olive oil or butter in a large skillet over med/high heat
sprinkle 4 tilapia fillets with salt and pepper
cook fillets 5 min each side or until fish flakes easily

serve immediately topped with salsa

Griddled Corn Cakes with Berry Syrup

This recipe is from "Cooking for Isaiah" by Silvana Nardone. I have only made a few things so far but everything has been so great! I highly recommend it if you are in the gluten free and dairy free crowd. The cornmeal in these pancakes give the best flavor and texture. I fell in love at first bite!

1 1/4 cups rice milk
2 tsp cider vinegar
1 cup GF pancake mix
1 cup cornmeal
1/2 tsp salt
2 large eggs at room temp lightly beaten
1/4 cup vegetable oil

syrup:
1 cup fruit jelly
1/4 cup water

In a small bowl stir together the milk and vinegar
Whisk together the pancake mix, cornmeal and salt. Add the milk mixture, eggs and oil, stir until just combined.
Heat a large nonstick skillet over medium heat and grease lightly with oil. Pour the batter about 1/4 cup at a time and cook 2 minutes each side or until golden and set.
To make the syrup, in a small sauce pan over medium heat cook the jelly and water until syrupy, stirring constantly
