Basil Chicken Meatballs with Ponzu Sauce





OK, these are so good, flavorful and refreshing! Bright yummy flavors perfect for the summer.
Hands down my favorite meatball!



Basil Chicken Meatballs with Ponzu Sauce
Meatballs:
2/3 cup panko bread crumbs ( or GF bread crumbs)
1/3 cup flaked coconut
1/4 cup chopped green onions
1/4 cup chopped fresh basil
2 T sweet chili sauce
2 tsp minced garlic
1 1/2 tsp fish sauce
1 1/2 lbs ground chicken
2 large egg whites lightly beaten

Sauce:
1/4 cup low sodium soy sauce
2 T small basil leaves
1 T chopped green onions
2 T fresh orange juice
1 T lemon juice
1 1/2 tsp water


Preheat oven to 425 F
To make meatballs combine all ingredients and shape into 1 1/2 in. balls. Heat a large skillet over med-high heat and brown meatballs on all sides. Remove meatballs from pan and bake 7-10 minutes or until done.

To make sauce combine all ingredients and serve with meatballs

Just bought all the necessary ingredients for this because it sure looks & sounds yummy.
